it cheers without inebriating. When beer was first manufactured, is
wrapt in the dim chronology of the past, hidden in the unwritten history
of people, who have left traces of a civilization we but imitate to-day.
The famous cities of the East and West, have had an added reputation
from the enterprise of their breweries, some of them, in fact, are chiefly
known from the reputation of beer manufactured in them, and there are
no branches of business carried on in this country which control a larger
aggregate capital, or transact a more extended business than the manufac-
turers of lager beer. In the last few years the southern cities are not only
competing, but are even rivalling the East and West, in the production of
beer, and since 1883, San Antonio is assuming a foremost position in this
regard. In that year Mr. J. B. Belohradsky established the nucleus of
the present City Brewery. From the start he fixed his determination to
make a pure, unadulterated lager beer, manufactured by Bohemian meth-
ods, risking his reputation and success on the honest purity of his product,
rather than haste to acquire money by cheapening his beer with adultera-
tion. That he succeeded, is part of the history of the city ; no brand of
beer, whether imported or domestic, can imperil the prestige or popularity
of Belohradsky's City Brewery Beer, located near the source of the San
Antonio river ; the water used in the manufacture of this beer is taken
from the springs at head-water, where it is absolutely pure and unmixed
with any deleterious substance. In addition, it is boiled, thus freeing it
from all mineral or organic matter. The brewery is a large and substan-
tial building, 78 by 90 feet in size, 3 and 4 stories in height. It is most
thoroughly equipped with all the best modern machinery and mechanical
appliances, including refrigerating machinery, ice machines and bottling
machinery, and steam engines of 95 horse-power. Mr. Belohradsky is
also prepared to manufacture his own malt. The cellars, two in number,
are of the best design for the storage and maturing of beer ; one is 52 by
60 feet in dimensions, the other 26 by 60 feet. The grounds cover an area
of 8 and 1-6 acres. The trade of this brewery extends through Texas and
into Mexico—and for purity, body-life-color and flavor, this beer ranks
the very first. The capacity is about 40,000 barrels annually. Fifty-
five hands are employed in various capacities ; 250 dozen bottles are put
up and sent out daily of this beer, which is a stroug evidence of its popu-
larity.

There are in San Antonio, some special branches of industry which
contribute more than most others, not only to her extension and improve-
ment, but to her solidity and attractive appearance, and which present
stronger claims for distinctive recognition than the ordinary mercantile
